It's been a while! :) So much has been going on...
We had a tsunami warning here in Hawaii Thursday night and into Friday morning!
We are all safe after evacuations and most of the damage is to the beaches.
Please pray for everyone in Japan! They are all hurting so much!
Other than that...
Things have been crazy busy which is why I have been trying simple
and new recipes that don't require that much prep or cook time!
French Bread Pizza!
Ingredients
-Tomato sauce or marinara sauce
-Mozzarella cheese
-Pepperoni
-French bread (I like freshly baked bread!)
-Other toppings such as mushrooms, peppers, onions, etc if you desire
Directions
1. Preheat oven to 350 degrees F.
Cut french bread in half and then cut the halves in half.
2. Remove a little of the middle of the bread.
3. Spread sauce and add your toppings!
4. Bake at 350 degrees F until cheese is melted and golden brown!
Strawberry-Chicken Salad
-1 lb boneless, skinless chicken breast halves
-1 (10 ounce) package spring greens mix
-1 pint fresh strawberries, sliced
-1/2 cup chopped walnuts
-Dressing
-3/4 cup honey
-2/3 cup red wine vinegar
-1 tablespoon soy sauce
-1 teaspoon ground ginger
Directions
1. Cut chicken into strips and place in large skillet with a little oil.
Cook and stir chicken on medium to high heat for about 10 minutes.
2. While chicken cooks, combine all dressing ingredients and mix well.
After strips cook, pour 1/2 cup dressing into skillet with chicken and cook 2
minutes longer or until liquid evaporates.
3. In salad bowl, combine spring greens mix, sliced strawberries, and chopped walnuts.
Pour in remaining dressing and toss. Top with chicken strips!
